Lustre Powder - Sapphire Blue

Also known as pearlescent or ‘edible luster’, these Lustre Powders are food-safe and offer a fine sheen or lustre to finished products such as chocolate.  For example, with chocolates, they can be applied beforehand in the chocolate mould or brushed on the finished product after unmoulding.  Their best use is when a little powder is applied - the “less is more” rule applies here.  Overuse distracts from the shine and quality of the chocolate; they should be used to enhance rather than mask.
